Crystal Rice Paper Rolls

Crisp cucumber wrapped in chewy rice paper, with salmon and a thin egg omelet, dressed in a tsuyu-gochugaru sauce. Make these ahead — they stay chewy and won’t stick together, even after a while.

Ingredients

  • Rice paper sheets
  • Thin egg omelet, sliced into strips
  • Cucumber, sliced into strips
  • Thinly sliced salmon (sashimi-grade)
  • Green onions, chopped
  • Tsuyu sauce
  • Gochugaru (Korean chili flakes), to taste

Instructions

1Salmon, cucumber, and egg strips laid out with green onions

Prep the fillings: thin strips of salmon, cucumber, and a thin egg omelet, plus chopped green onions.

2A wet tray for softening the rice paper

Lightly wet a sheet of rice paper until it’s pliable.

3Gochugaru being added to the tsuyu sauce

Mix tsuyu with a pinch of gochugaru to make the dipping sauce.

4Fillings being wrapped in the softened rice paper

Lay the salmon, cucumber, and egg on the rice paper and roll it up.

Tip. These keep well — make them ahead and they’ll stay chewy without sticking together, even after sitting for a while.
