Lazy Salmon Sushi

Salt-cured salmon over pressed, vinegared rice, cut into neat squares — no rolling mat required.

Ingredients

  • Salmon fillet
  • Salt
  • Dried kelp, to wrap
  • 2 bowls freshly cooked rice
  • 3 tablespoons vinegar
  • 3/4 tablespoon sugar
  • 1/3 tablespoon salt
  • Wasabi and soy sauce, to serve

Instructions

1Salted salmon wrapped in dried kelp to cure

Lightly salt the salmon, wrap it in dried kelp, and cure for at least 12 hours (safe to eat up to 3 days).

2Cured salmon sliced into bite-sized pieces

Slice the cured salmon into bite-sized pieces.

3Rice pressed into a container with sushi vinegar

Mix freshly cooked rice with sushi vinegar (2 bowls rice + 3 tbsp vinegar + 3/4 tbsp sugar + 1/3 tbsp salt), then press it firmly into a container.

4Pressed rice flipped onto a plate and cut into squares

Flip the rice onto a plate, cut into bite-sized squares, and top with the sliced salmon. Serve with wasabi and soy sauce.
